Just Tomatoes

Sometimes simple cannot be beaten. You don’t need many ingredients or complex techniques to get the best out of a dish. These tomatoes are the ultimate proof of what I just said. My Italian grandma used to make this great side dish and my mum still makes it too in the Summer.

The most important thing is to choose your tomatoes well. Ideally, they should be San Marzano which is an Italian variety of plum tomato commonly used to make pasta. If you can’t find them just choose a sweet variety of tomato.

I am not going to indicate quantities as this is a very “free” and easy roasting recipe.

The simpler the better.

 Ingredients

San Marzano Tomatoes
2 handfuls of parsley
Salt & Pepper
Garlic
Olive oil

Time

30min rest +30min to cook

Step by Step

  •  Wash your tomatoes and cut them in half. With your fingers scoop out the seeds

  • Sprinkle some salt on top and let them rest face down on kitchen roll for 30min

  • Get rid of the excess water of the tomatoes and place them face up in a roasting tray

  • Cut the garlic in small pieces and place a tiny piece of garlic inside each tomato

  • Chop the parsley thinly and sprinkle generously on each tomato

  • Add olive oil and sprinkle with pepper

  •  Bake in the oven at 180° C for 30-40 minutes and switch to grill for the final 5min

  • Enjoy at room temperature

Tips & cheats

This is a very simple recipe so luckily there are no watch outs and only a few tips:

The reason why I add bigger pieces of garlic is because I can get rid of the after baking the tomatoes. This will make your tomatoes easier to digest.

If you want to add some crunchiness you can mix your parsley with a handful of breadcrumbs and parmesan cheese. Leave the rest of the recipe unchanged.

These keep extremely well in the fridge and are a perfect side for a BBQ.
