Goodbye Summer Salad
The past few days in London have been quite cold and after spending a whole month in Greece I think I feel ready to say goodbye to the Summer of 2020.
I will do it in style with my Melon Summer Salad.
This is to me the most perfect fresh combination of ingredients. It is fantastic as a bbq side dish and also works well when you feel a little lazy and don’t want to work too hard in the kitchen.
Phil didn’t touch the salad and I am ok with that as it actually means there is more for me!
Don’t get nervous about using a melon in a salad, it tastes great when paired up with goat cheese, pine nuts and lemon juice.
Ingredients:
1 red onion
1 cucumber (or 6 baby cucumbers)
1 melon
1 handful of mint
1 handful of kalamata olives
1 handful roasted pine nuts
Goat cheese
2tbsp lemon juice
2tbsp wine vinegar
2tbsp olive oil
1tsp sugar
Salt/Pepper
Time
20min rest
These quantities are enough for 4 people
Step by Step
Thinly slice the onion and put it in a bowl
Add the lemon juice, vinegar, sugar, olive oil, salt and pepper and mix well
Let the onions rest in the juice while you prepare the rest of the ingredients
Toast the pine nuts in a non-stick pan until golden
Chop the cucumbers and melon. I used a small scoop to make cute little melon balls
Add the cucumbers, olives and melon in the bowl with the onion. Mix everything
Crumble the goat cheese on top, scatter the pine nut and add a few leaves of mint
Your salad is ready!
Tips & cheats
Not much can go wrong with a salad, so I am going to use this space to give you a few different variants of this salad:
Swap the melon with watermelon and the vinegar with balsamico
You can use feta instead of goat cheese
You can use flaked almonds instead of pine nuts
Try adding in a few thin ribbons of raw courgette or carrots for extra colour
