Salsicce e Patate
This is not really a recipe but rather a “I’ll just chuck everything in the oven” kind of situation. Even so, I guarantee you it’s one of the best comfort food combos out there.
It’s the perfect choice when you are feeling a bit down and the weather is cold.
It makes me think of sitting at home with my family in front of the fireplace. There is no particular reason for this association, but this is how good this will make you feel.

In this case it’s the sausages and I would say that most of the times the meat will dictate cooking times. You can always have a staggered approach and put things in the oven at different times which will help you achieve the best results.

Step by step
Preheat the oven at 200
Peel the potatoes and cut them in big chunks
Cut the onions into wedges
Put the potatoes on a baking tray with the rosemary and add salt and pepper
Sprinkle with olive oil and toss them around to make sure they are evenly coated
Put them in the oven for 20min
Take the tray out of the oven and add the sausages and onions. Sprinkle with olive oil and put the tray back in the oven
Cook for 1 hour and don’t forget to turn the sausage halfway
Tips & cheats (what can go wrong and how to fix it)
Do not pierce the sausages before you cook them. It will dry them!
If your oven is not the most reliable, make sure you rotate your tray while cooking so the sausages will end up having an even colour
